.AsChatClient no longer exists

All of the samples continue to use the older verison of Microsoft.Extensions.AI instead of the latest preview release. .AsChatClient has been first depreciated and now removed.

Thus these won't build with the latest version, and there is no example anywhere that I can find of either OpenAI nor the Azure OpenAI client being able to be made into an IChatClient.

@JamesFieldist There seem to currently be four possibilities of origin for a conversion from the OpenAI library to IChatClient as far as I can see: ChatClient, OpenAIResponseClient, AudioClient, EmbeddingClient.

The main downside of using ChatClient or OpenAIResponseClient seem to be that you have to provide the model name on construction.
