ci: Automated update vc-platform from PR undefined undefined

Switching the platform container tag affects the whole backend stack on deploy; risk is limited to a routine manifest bump with no module version changes in this diff.

Overview
Updates backend/packages.json so QA deployments use the 3.1067.0 platform release instead of the previous PR/pre-release image tag (3.1066.0-pr-3111-…).

PlatformVersion and PlatformImageTag both point at ghcr.io/virtocommerce/platform:3.1067.0. Module entries in the manifest are unchanged; the only other diff is a trailing newline at EOF.

Downstream deploy-backend reads this file for vc-build InstallModules and the Docker PLATFORM_TAG, so merges on vcptcore-* will rebuild against the new base image.
