Overview
Updates backend/packages.json to point the backend at the VirtoCommerce platform 3.1068.0 release image instead of the previous PR prerelease tag (3.1066.0-pr-3111-...).

PlatformVersion and PlatformImageTag are both set to 3.1068.0 on ghcr.io/virtocommerce/platform. Module entries in the manifest are unchanged in this diff. Deploy workflows that read this file will install modules against the new platform version and pull the matching container image.
