Quickstart for the noaa-hrrr-forecast-48-hour-virtual dataset: simulated radar mosaic, point forecast time series, precipitation deaccumulation to mm/s, a MetPy skew-T from the pressure_level group, an interactive 3D storm isosurface, a 48-hour updraft-helicity swath, and a Hurricane Milton reflectivity animation. Maps use HRRR's native Lambert Conformal projection built from the dataset's CRS metadata. Bumps dynamical-catalog to 0.7.0 and gribberish to 1.5.0 (required for the virtual store's codecs) and adds metpy and plotly. Note: cell 3 points the catalog at stac-staging while the dataset is staging-only; remove that line once it is promoted to prod. Co-Authored-By: Claude Opus 4.8 (1M context) <noreply@anthropic.com>

The noaa-hrrr-forecast-48-hour-virtual item reused the materialized HRRR 48-hour notebook as a placeholder. Now that a dedicated virtual quickstart exists (dynamical-org/notebooks#38), wire it up with _quickstart_notebook (slug now matches the item id).
