ci: run PHPStan on PHP 8.4 (main) - #91

PHPStan ran on PHP 8.3, but the dependencies now need PHP 8.4 (Laravel 13, locks built on 8.4), so composer could not install and the job failed before analysing anything. Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>

PHPStan ran on PHP 8.3; the dependencies now require PHP 8.4 (Laravel 13 / lockfiles built on 8.4), so
composer installfailed and the job never analysed anything. It now runs on PHP 8.4, like tests.yml. If this PR shows real PHPStan errors, they were hidden before by the install failure.
