Not sure why, but for some reason when used the keypad will press right and A at the same time. All of the other buttons work great, including A itself.
Not sure if the Pico is picking up the final bit and believes that it is part of the starting bit as well - thus thinking both buttons are pressed...? Not sure. Any feedback would be appreciated

Using Circuit Python Ver. 6.3 (and ver. 6.x for the HID lib) - tested it with 6.2 beta 2 like you had in your video and same issue)
Not sure if this is a hardware issue or a code issue. The controller itself when re-wired and plugged back into the NES still works as normal, leading me to believe it may be a software issue.
